Delicious Thekera Tenga Recipe

Thekera Tenga is a popular sour curry from Assamese cuisine. Thekera, a dried fruit, is used as a souring agent in Assamese dishes. In this vegetarian version, roasted potato slices are added to enhance the flavors. This simple, rustic and delicious dish can be served with steamed rice or rotis.

For this recipe, thinly sliced potatoes are shallow fried until golden brown. In a separate pan, a tempering of mustard oil, panch phoran masala, green chillies, and coriander leaves is prepared. To this, water, salt, and turmeric powder are added. The rice flour, mixed with water or mashed potato, thickens the gravy. Finally, the dish is enhanced with the tangy flavor of lemon juice or the water from soaked thekera pieces. The roasted potatoes are then added to the mixture and cooked for a few more minutes until the flavors blend together.

Garnish the Thekera Tenga with fresh cilantro leaves and serve it alongside steamed rice or flatbreads for a delightful weekday dinner.
