Delicious Pineapple Chicken Curry Recipe

Pineapple Chicken Curry is a Thai-style main course dish that combines the sweet and tangy flavor of pineapple with the spicy kick of Thai red curry sauce. It’s a dish that is both easy to make and packed with delicious flavors.

This Pineapple Chicken Curry recipe is a personal favorite of mine. The homemade Thai Red Curry paste gives it a unique and authentic flavor that you won’t find in pre-made curry pastes. However, if you prefer, you can use ready-made curry paste from brands like Real Thai, Blue Elephant, Mesri, or Ayam.

For this flavorful curry, you’ll need boneless chicken pieces, red curry paste, pineapple, mixed bell peppers, turkey berry, cherry tomato, green beans, shallots or red onions, oil (such as roasted sesame oil, peanut oil, coconut oil), and herbs and seasonings like kaffir lime leaves, bird’s eye chili, spring onion, brown sugar, salt, garlic, and curry or chili powder. You’ll also need thin coconut milk to create a creamy texture and taste.

Here’s how to make Pineapple Chicken Curry:

1. Clean, wash, and pat dry the chicken pieces.
2. Heat oil in a wok and add minced garlic and shallots. Fry them briefly until translucent and fragrant.
3. Add the chicken pieces and fry them until they turn pale white from both sides.
4. Mix in the red curry paste, curry powder or chili powder, brown sugar, and half of the coconut milk. Stir fry for a few minutes.
5. Add the cherry tomatoes, bell peppers, kaffir lime leaves, sliced red chili, and the remaining coconut milk. Mix well.
6. Add the pineapple pieces. Cover and simmer the curry over low heat for about 5 minutes, or until the chicken and pineapple are tender.
7. Garnish with chopped green onion or Thai basil.

Serve the Pineapple Chicken Curry with jasmine rice or another aromatic short to medium-grain rice. The rice complements the curry and completes the meal. You can also serve it with rice noodles for a different twist.
