Delicious & Easy Garlic-Thyme Roast Potatoes Recipe

This is a recipe for delicious and easy garlic-thyme roast potatoes that are perfect for everyday meals. These potatoes have a beautiful golden exterior, a soft interior, and are infused with amazing flavors from garlic and thyme. They are quick to prepare and the result is absolutely delicious!

Ingredients:

  • 1 kg/2 lb baby potatoes or other small potatoes, halved
  • 4 tbsp extra virgin olive oil
  • 1 tsp cooking/kosher salt
  • 1/4 tsp black pepper
  • 5 cloves of garlic with skin on, smashed
  • 5 sprigs of fresh thyme or 3 sprigs of rosemary

Instructions:

  1. Preheat oven to 200°C/400°F (180°C fan).
  2. Smashed garlic – Place side of the knife on an unpeeled garlic clove. Hit firmly with the palm of your hand to burst it open slightly, but mostly keep it intact.
  3. Toss – Put the potatoes on a tray and push them together. Drizzle with olive oil, sprinkle with salt and pepper. Toss to coat. Toss through the thyme and garlic. Spread the potatoes out on the tray.
  4. Roast for 1 hour – Roast for 30 minutes, then toss. Roast for another 25 to 35 minutes, or until the potatoes are golden.
  5. Serve – Sprinkle with fresh parsley, if desired, and serve immediately!
