Wholesome Vegan Banana Bars Recipe

Directions/Method

  1. Preheat the oven to 175°C (350°F). Lightly grease a 10 x 15 inch jelly roll tin.
  2. In a bowl, mash the banana until it is mostly liquidy with only small lumps remaining. Whisk in the sugar, apple sauce, margarine, yogurt, and vanilla until the mixture becomes smooth with a few lumps.
  3. Slowly add the flour, baking powder, mixed spice, and salt, mixing until all the ingredients are well combined.
  4. Spread the thick batter evenly on the jelly roll sheet using a spatula or your hands. Don’t worry too much about making it perfectly level.
  5. Bake for 18-20 minutes or until the top is lightly browned. Once baked, transfer to a cooling rack to cool completely.
  6. To make the peanut butter icing, combine the icing sugar, peanut butter, and non-dairy milk until well blended. If you prefer a spreadable consistency, add more liquid as needed.
  7. Decorate the cooled banana bars with the peanut butter icing by piping it in random patterns. Cut into bars and serve.
