Wholesome Vegan Banana Bars Recipe
Directions/Method
- Preheat the oven to 175°C (350°F). Lightly grease a 10 x 15 inch jelly roll tin.
- In a bowl, mash the banana until it is mostly liquidy with only small lumps remaining. Whisk in the sugar, apple sauce, margarine, yogurt, and vanilla until the mixture becomes smooth with a few lumps.
- Slowly add the flour, baking powder, mixed spice, and salt, mixing until all the ingredients are well combined.
- Spread the thick batter evenly on the jelly roll sheet using a spatula or your hands. Don’t worry too much about making it perfectly level.
- Bake for 18-20 minutes or until the top is lightly browned. Once baked, transfer to a cooling rack to cool completely.
- To make the peanut butter icing, combine the icing sugar, peanut butter, and non-dairy milk until well blended. If you prefer a spreadable consistency, add more liquid as needed.
- Decorate the cooled banana bars with the peanut butter icing by piping it in random patterns. Cut into bars and serve.
