Ingredients

  • Butter
  • Sugar
  • Cocoa powder
  • Eggs
  • Salt & vanilla
  • All-purpose flour

The secret to these brownies is using pure butter instead of oil. The butter adds incredible flavor, while the sugar balances the bitterness of the cocoa powder. It also adds texture to the brownies, making the centers soft and the tops crinkly. The eggs provide richness and structure, while the salt and vanilla enhance the overall flavor. All-purpose flour is used in minimal quantity to achieve extra fudgy brownies.

This recipe is slightly adapted from Alice Medrich’s Cocoa Brownies recipe. Instead of using melted chocolate, it calls for cocoa powder. This allows for softer and moister middles and shiny, candy-like tops.

Instructions

  1. Melt the butter with sugar, salt, and cocoa powder in a saucepan over low heat. This creates a gritty mixture that helps create the crinkly top.
  2. Add the vanilla and eggs one at a time. Mix well after each addition until the batter looks like shiny pudding.
  3. Add the flour and beat the batter until it is very thick and pulls away from the sides of the bowl. Mix in chopped nuts if desired.
  4. Spread the batter evenly in a prepared baking pan and bake for 20-30 minutes until the edges are dry and the middle is slightly underbaked. Cool completely before cutting into squares.

Make sure to use an 8-inch square pan for baking. If using a larger pan, double the recipe. Light-colored or shiny metal baking pans are recommended for even cooking, but if using dark or non-metal pans, adjust the baking time accordingly.

To determine doneness, insert a toothpick into the center of the brownies. If it comes out with a few moist crumbs, they are done. It’s better to slightly underbake them as they will continue to cook as they cool.

Enjoy these homemade brownies that are sure to impress your taste buds!
