Palak Kadhi, Spinach Ki Kadhi

Palak Kadhi is a delicious side dish made with spinach, yogurt, and gram flour. It is mildly spiced and is enjoyed all over India. While Kadhi is made differently in different regions of the country, besan (gram flour) remains a common ingredient. In my household, we make kadhi thick with dumplings. In Gujarat, they make it watery and sweet and sour in taste. Palak Kadhi has become a comforting side dish for us because it is easy to make and goes well with any meal.

Ingredients:
– 2 Tbsp besan (gram flour)
– ½ cup yogurt
– 1 cup finely chopped spinach
– 2 Tbsp oil
– 1 whole red chili
– ½ tsp cumin seeds
– ¼ tsp fenugreek seeds
– ⅛ tsp asafetida
– ¼ tsp turmeric
– ¼ tsp red chili powder
– ½ tsp salt

Instructions:
1. In a bowl, mix besan, turmeric, and yogurt until smooth. Add 2 cups of water slowly, mixing well.
2. Heat oil in a saucepan. Add cumin seeds and asafetida. When the cumin seeds crack, turn off the heat and add fenugreek seeds and whole red chili. Stir for a few seconds, then add red chili powder. Add spinach and stir for a minute.
3. Add the yogurt mixture and cook on medium heat until the kadhi comes to a boil.
4. Add salt and reduce the heat to medium-low. Let the kadhi cook for 20-35 minutes, stirring occasionally. Adjust the thickness by adding more water if necessary. The kadhi should have a pourable consistency.
