Ingredients

  • 1kg (2 1/4 lbs) boneless chicken thighs, skin removed and cut into bite-sized pieces
  • For the first marinade:
  • 3 tbsp lemon juice
  • 1 tsp salt
  • 2 tbsp garlic and ginger paste
  • 1 tsp rapeseed (canola) oil
  • For the second marinade:
  • 70g (1/4 cup) Greek yogurt
  • 1 – 3 tbsp Kashmiri chili powder (to taste)
  • 1 tbsp ground cumin
  • 1 tbsp ground coriander
  • 1 tsp amchoor powder
  • 1 tbsp tandoori masala
  • 1 tbsp garam masala
  • 1 tsp ground turmeric
  • 1 tsp ground black pepper
  • 2 tbsp garlic, ginger, and chili paste
  • To finish:
  • 1 tbsp chaat masala
  • 2 cubes butter
  • 4 tbsp Greek yogurt
  • Flaky salt to taste

Instructions

  1. Combine the first marinade ingredients and rub them onto the chicken.
  2. In a separate bowl, whisk together the second marinade ingredients until smooth.
  3. Pour the second marinade over the chicken, ensuring it’s well-coated.
  4. Let the chicken marinate for at least 30 minutes, but for best results, marinate it for one to two days.
  5. Preheat your barbecue and skewer the chicken onto metal skewers.
  6. Cook the chicken over hot coals, turning them occasionally for even cooking.
  7. Melt the butter in a pan over the coals.
  8. Once the chicken is cooked through and charred, transfer it to a serving bowl.
  9. Add chaat masala and yogurt to the chicken, and mix well.
  10. Pour the hot butter over the chicken and stir it in.
  11. Season with flaky salt to taste.
