Ingredients:

  • 1½ cups unsalted butter
  • 1½ cups packed light brown sugar
  • 1 cup granulated sugar

  • 1 Tbsp vanilla extract

Instructions:

  1. Melt butter in the microwave. Pour into the bowl and electric stand mixer. Let cool.
  2. Add brown sugar and granulated sugar to the bowl and mix for 4 minutes.
  3. Mix together baking soda and warm water and stir to dissolve. Add baking soda mixture and vanilla extract to the dough. Mix well.
  4. In a large bowl, whisk together all-purpose flour, cake flour, baking powder, cinnamon, and salt.
  5. Slowly add the flour mixture to the batter.
  6. Add chocolate chips and chopped pecans to the dough and stir with a wooden spoon or rubber spatula.
  7. Using a medium cookie scoop to scoop the dough and place it on a baking sheet lined with parchment paper or a silicone mat. Cover the baking pan with plastic wrap and chill in the refrigerator for 3 hours up to overnight.
  8. Preheat oven to 350ºF.
  9. Remove the dough from the fridge and place cookie dough balls on parchment-lined baking sheets 2 inches apart.
